Simple designs are often harder to create than complex ones, since you have to choose just the right elements to get your point across. And when designing something as small as a postcard, you really have to work hard to fit in the message and end up with a pleasing design. Plus, after you’ve designed a few, it’s tempting to not just recycle old designs.

Some good points you have, simplicity challenges one to have a logical reasoning behind every element they add to a design. Which equals to a meaningful, communicative, and logical design, rather than just ‘eye candy’.
